I started to write and blog about Mexican food, not only because I wanted to show people in UK that you can cook authentic and delicious Mexican food with the ingredients you find in UK, but also because I wanted to teach my children the richness about our cuisine and to preserve my family recipes. So one thing led to another one and now my blog adventure led me to start teaching people how to cook Mexican food in London. I also do supper clubs from time to time and cook for small dinner parties. I decided to cook this for you, because although we have lots of famous Mexican breakfasts, like chilaquiles or huevos rancheros, this breakfast is super special for me, as it used to be my dad’s favourite breakfast. I’m from the north of Mexico, from Baja California and we love our carnes asadas (barbecues) so we eat a lot of meat, arrachera (bavette) is our favourite. So this breakfast is simple, but packed with Northern Mexican flavours. It is always serve with refried beans, fresh made corn tortillas, spicy salsa and eggs. My dad used to have black coffee and orange juice to drink with it. Serves 2 Ingredients 300 gr bavette steak or any steak cut thinly strips 2 tomatoes 1/2 onion 1/2 green pepper 1 large fresh jalapeño Salt to taste Pinch of ground black pepper 2 tbsp rapeseed or vegetable oil To serve Refried beans Fried eggs Corn tortillas Spicy salsa Method Start by making the salsa and tortillas. Chop all the vegetables in julienned and have them ready. Heat a frying pan then add the oil. Once the oil is hot, add the vegetables, fry for 5 min, mixing continuously and add all the steak. Add salt and ground black pepper. While the meat is frying, cook the beans and fry the eggs. Cook the bistec for 7 min. Do not over cook it, otherwise it will be very chewy. To serve, spread some refried beans onto a plate then put some bistec ranchero and the eggs. Eat it with corn tortillas, spicy salsa. Enjoy」6月13日 18時18分
