龙须糖 Long Xu Tang, also known as Dragon’s Beard Candy 🐲🐲🐲. A sort of Chinese cousin to Western style candy floss, but also to Pişmaniye, Pashmak and many others. A mixture of white sugar and maltose (often with extras such as glutinous rice flour, peanuts and sesame) is heated to form a thick sugary liquid and as it cools, it’s stretched in powdered sugar. The loops are folded back on itself again and again until delicate hairlike strands of sugar are created.
