Milpa Alta produces a fifth of the nopales consumed in Mexico. Earlier this year we went to Mercado De Acopio De Nopal with @jorgevallejo from @rest_quintonil (currently number 9 on Worlds 50 Best restaurants) to find out more how nopales are grown, harvested and consumed. On the farm of @rutadelamilpa they made us tricolour corn tortillas using a technique I’d never seen before, where the masa is scraped across a cloth through a window and we ate tacos of nopales and beef. The cactus plant is incredible, it grows fast in the rich volcanic soils of the region and is often dubbed a superfood for its impressive nutritional values #symmetrybreakfast
