今日の和菓子はねりきりで作った水温むです。
ねりきりとは白餡に餅や芋を混ぜて作った和菓子で
茶道 で使われる「主菓子」の一種です。
撮影 用に作成しました。
先日、wagashi asobi の稲葉さんの講演を少しだけ聞きました。
というか最後の方だけ聞きました。
言い回しが少し違いますが
「和菓子職人さんの所得が低いです。これでは和菓子職人になろうと思う人が少ないです。」
という所に共感しました。
福泉堂は低賃金ですけどね。

Today's wagashi is Snow melting water with Nerikiri.
The Nerikiri is the material of wagashi made by mixing the rice cake and yam
in white bean.
Is a kind of "Jounamagashi" as used in the tea ceremony.
The sweets I've made for the shooting.
I’ll be demonstrating and selling wagashi at Sunrise Mart in Brooklyn from 3/9-10.
