Mushroom Tofu for 4 servings
Ingredients:
• 1 pack of tofu
• 40g Maitake mushrooms
• 60g Shimeji mushrooms
• 2 Shiitake mushrooms
• 80g Nameko mushrooms
• 1/2 clove of garlic
• 2 teaspoons of rapeseed oil
• 1 teaspoon of soy sauce
• Salt to taste
• Yuzu (Japanese citrus) to taste

Instructions:
1. Clean each mushroom and cut them into bite-sized pieces.
2. Place the tofu in a serving dish.
3. Peel and crush the garlic, removing the germ.
4. Heat the garlic on rapeseed oil over low heat in a pot.
5. Once the garlic becomes fragrant, add the mushrooms (except nameko mushrooms).
6. Sprinkle a pinch of salt and stir-fry over medium heat until the mushrooms become moist and release their moisture.
7. Cover the pot, reduce the heat to low, and let it steam for about 5 minutes.
8. Add nameko mushrooms, stir, and add water if needed, especially if the mixture seems dry.
9. Adjust the seasoning with soy sauce and salt.
10. Place the tofu dish in a steamer with steam rising.
11. Steam the tofu for 10 minutes. Reheat the mushrooms and pour them over the tofu.
12. Grate the yuzu peel and sprinkle it over the dish.
