This is the kind of dish that you can make in so many different ways and there are many variations on this dish depending on where in the world you come from. ⁣ ⁣ Yemista is an amazing example of how you can use vegetables to make food that is so delicious and full of flavour. ⁣ ⁣ My family would use zucchini (courgette), tomato, capsicum (peppers) or eggplant (aubergine) to make the “cup” for the yemista. Then you can stuff the vegetable with a mixture of rice, mince meat (if you eat meat), more vegetables, or whatever you like! You can season it with whatever your favourite herbs and spices are. Then put them in the oven to cook.
