Monday: Zhi Ma Jiang Pancakes 芝麻酱烙饼 (I made it up so don’t go looking ?) buckwheat pancakes topped with Chinese sesame paste mixed with maple syrup 枫糖浆 and smushed raspberries, it’s like next level peanut butter ❤️

Chinese sesame paste is a little bit different from tahini because the seeds are heavily toasted first before being pulverised. It’s far richer in flavour, I wouldn’t add garlic or lemon to it personally so if you’ve already got rich flavours going on, best stick with tahini for balance. The consistency is also much runnier and pourable. Traditionally the Chinese use it on noodles and leafy green vegetable dishes but I’m going to start experimenting this week! #symmetrybreakfast
