Farinata, is an Italian pancake/bread made with chickpea flour, also known as Socca in France. It's one part chickpea/besan flour, three parts water, a pinch of salt, wait a few hours, skim off the foam and bake. It ticks all the health boxes too ✔️✔️✔️ if you're into that ?
