Lemon Tiramisu
Servings: 2

INGREDIENTS
200 ml heavy cream
A
200g cream cheese
4 tablespoons sugar
1 egg yolk

1 tablespoon lemon juice
B
1 tablespoon cake flour
4 tablespoons sugar
1 egg
2 tablespoons lemon juice

zest of 1/2 Lemon (thoroughly washed, pesticide-free, and grated)
10g butter
C
1 tablespoon water
1 tablespoon sugar
1 teaspoon lemon juice

finger biscuits, as needed
zest of lemon (for garnish, thoroughly washed, pesticide-free, and grated)
fresh mint leaves, as needed

PREPARATION
1. In a bowl, pour the heavy cream and whisk it with a hand mixer until it forms stiff peaks.
2. In another bowl, combine A and use a hand mixer to whip them until smooth. Add lemon juice and mix it in.
3. Gradually add (1) into (2) in three parts, gently folding each time.
4. Mix B in a bowl and then transfer it to a saucepan. Add lemon zest and cook over medium heat until it comes to a simmer. Remove from heat, add butter, and mix. Let it cool.
5. In a heatproof bowl, combine C and microwave on 600W for 30 seconds.
6. Arrange finger biscuits in the serving dish and brush them with (5).
7. Fill a pastry bag with half of the (3) mixture and pipe it over the biscuits in the dish. Use a spoon to level it.
8. Pour (4) mixture over (7), and level it with a spoon.
9. Pipe the remaining half of (3) over the top of (8). Garnish with lemon zest and mint leaves.
10. Enjoy!
