Im here in Bologna to teach cooking at Restaurant @rootsmodena , inspiring project by @jessrosval who I respect and the head chef of @casamarialuigia , and her friend Caroline. The ladies working there are refugees and immigrants from countries like Nigeria and Mari.
Roots is the place for the career training, but at the same timing, it is the restaurant to showcase their native culture to the diners.

The dish I taught was 'okowa', Japanese steamed rice dish. I wrapped the rice with banana leaves to reflet their native culture, this time, Africa.
Also, I shared the skills of mango flowers, used for my signature mango tarte.

ボローニャにあるCasa Maria Luiga のヘッドシェフのジェシカと友人のキャロラインが運営しており、ナイジェリアなどの国からの難民や移民の女性が働いているレストランに料理とデザートを教えにボローニャにきました。
これは仕事が見つけづらい難民や移民の女性たちに職業訓練を行い、彼らの郷土の味をレストランで提供するプロジェクトです。

日本の主食であるお米を使った料理のおこわをお店や家庭でも再現の可能性が広がるようにレシピをアレンジし、アフリカでよく使われるバナナの葉に変えてつくりました。デザートはマンゴーをお花の形に切るテクニックとパフェをつくりました。🥭🌹🌸
