I LOVE tomatoes 😍🍅. If you've been following me for a while, you might know that I follow a Mediterranean-style diet and tomatoes are a KEY element to many of these meals. Here are some facts you might not know about this delicious, versatile fruit.
➕Tomatoes taste better when they're at room temperature! So keep your tomatoes out of the fridge if you can (unless you won't be using them for at least a week, then refrigerate).
➕ Tomatoes contain lycopene which is an antioxidant that may help reduce the risk of disease. The redder the tomato, the more lycopene it contains! They're also a great source of Vitamin C, folate and potassium and provide healthy carbs and fibre.
➕YES tomatoes are a fruit but are usually prepared like a vegetable.
Some of my favourite Mediterranean-style meals using tomatoes include stuffed capsicums, bruschetta and a healthy Panzanella Salad ( a mix of different tomato types and colours - recipe available on my blog!!!) 😃.
