Somehow, even on a scorching hot summer day, #cacioepepe looks like the right choice when at a Roman trattoria. I never figured out how they make the grated sheep cheese (the punchy Roman pecorino) this creamy. I have resolved to make mine at home with an electric whisk (it's my dirty little secret for a perfect cacio e pepe), where I add little amounts of the cooking water at a time. Generous dose of freshly ground black pepper, toss the tonnarelli (or spaghetti) in. Serve. More pecorino. More pepper. Done. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The salty pecorino will make you thirsty. Keep chilled white wine at hand.
