These "Chocolate Snowballs" have been my very favourite for as long as I can remember. I still feel like a sneaky little kid when I reach for the last one on the platter on Christmas Day. (And yes, I still always reach for the last one on the platter! Did I mention they're my favourite?) The recipe is super simple: Melt 9 oz. semi-sweet chocolate squares in a large (non-stick, if you've got it) pan over medium low heat, stir in 15 oz. condensed milk, and then continue stirring occasionally for 30 minutes or so, until you've got a pile of silky, gooey, shining chocolate "dough" that almost holds its shape when you fold it over itself. (I like to use a silicone spatula for this whole process.) Now slide all that goodness onto on a parchment-lined plate to cool for a few minutes or until you're comfortable touching it, roll it into little balls (but don't stress about making them uniform!), and then roll the balls in unsweetened coconut.
They freeze great and defrost quickly at room temperature if you want to make them in advance. They also taste good straight out of the freezer when it's late at night and the Christmas tree is glowing and you've already brushed your teeth so you reeeeeally shouldn't, but..... ❤️
