I’ve set personal record for this week market and baked 171 loaves of 9 kinds during two 9h shifts. 8 dozens of 3 various pastries were there as well (@daretocook thanks for your help ❤️)? Every time I try to push my numbers, but this time I think I’ve reached the absolute max of what I can do alone working under pression of time. Soon I’m moving to a tiny room and I will be able to give myself more time to play and learn doughs. Can’t wait to make my bread better, slower and even more attentive, provide it proper controlled conditions and contemplate it in a full day light instead of nights I’m working now.
