Whole Eggplant Gratin
Servings: 2

INGREDIENTS
1 eggplant
A
1 boiled egg (finely chopped)
1 slice of bacon (cut into 1cm width)
1 tablespoon mayonnaise
1 tablespoon tomato ketchup
1/4 teaspoon salt
black pepper, as needed

2 tablespoons pizza cheese
chopped parsley, as needed

PREPARATION
1. Cut the eggplant in half lengthwise and make crisscross cuts with a knife.
2. Place the eggplant halves in a heat-resistant container, cover loosely with plastic wrap, and microwave on 600W for 3 minutes. Let it cool slightly.
3. Scoop out the flesh from the eggplant halves and transfer it to a bowl. Add A and mix well.
4. Stuff the mixture back into the hollowed eggplant halves and sprinkle pizza cheese on top.
5. Place the stuffed eggplants on a baking sheet lined with aluminum foil and broil them in a toaster oven until golden brown. Once done, garnish with chopped parsley. 6. Enjoy!
