MY GO-TO QUICK MEAL
When I have busy days, I LOVE making meals that take no time at all and are still healthy. This kind of simple pasta dish is a complete meal (full of protein, good fats, carbs, and vegetables) - so it's just what I need after a big day or workout! Making a dish like this can be done in MINUTES, all you need to do is:

✅ Boil your choice of pasta in a pot with a pinch of salt (a big pinch!)
✅ While your pasta is boiling, start to cook your protein in a pan with olive oil. I like chicken or prawns (shrimp) in my pasta, but you could use vegetarian options - such as lentils - too. Add seasoning - I love using oregano, salt, pepper, and lemon juice.
✅ Then add your choice of veggies to the pan - I like tomatoes, mushrooms and broccoli but you can use whatever you have in your fridge or pantry. Frozen or tinned vegetables are also fine!
✅ Once cooked, add in your cooked pasta with some pasta water and you're done!
