It’s cold and dark, farmers market stands looks pretty monochromatic. But we can make it through the winter as long as there are apples. Dozen of heirloom varieties, each different in taste and texture. My favourite are bojkens and russets, blended together they are perfect for baking. Do you have any favourites in old varieties?
