As a kid, it was always my job to mix up the frozen orange juice concentrate with water in a pitcher. Working on #ObjectProject, I’ve learned why concentrated juice came about.
During World War II, the Army wanted a better (read: tastier) way to deliver vitamin C to troops. This led to a new process called “cutback,” which involved taking evaporated O.J. and adding back just a splash of fresh juice. There’s some tasty American innovation for your 4th of July weekend.
Thanks, everyone, for letting me share with you this week! –Caitlin @国立アメリカ歴史博物館 #FoodHistory #StickyHands #Retro
