糠床に入れっぱなしにして古漬けになった茄子。色は綺麗だけどしょっぱかったです。

I had not made nuka-zuke for a while because the nuka-bed I got from my parents' house was ruined by their long absence, but I resumed making nuka-zuke in July. I used to put too many vegetables in the bran and regretted that I could not finish eating them. Now, I make enough to eat every day by pickling a small amount of vegetables in a larger amount of rice bran. However, there are times when I accidentally leave vegetables in the bran and over-soak them. This is the case with this eggplant. Perhaps it is because I took my time, but the color of the skin is soaked and very beautiful. However, it is a little salty.
