Rye fueled carmelisation is my favourite one!!

Here's the loaf with 10% more whole rye flour than usual 20 we do. We lost some volume and crumb densed a bit but rye flavor got so much more pronaunced. And this chocolate crust... Probably we won't switched to this, but it was fun to experience.
