This isn't your normal cod this is BLACK COD . Normal cod has very chewy skin and black cod is often served skinless for same reason. Very expensive but it's actually not really even in the cod family.

Once again using olive oil 🤦♀️, just an FYI...olive oil should NEVER be used as a cooking high heat oil! It denatures and becomes carcinogenic. No good!!!

Sorry - she would be “chopped” for presentation and how she prepared the black cod. Black cod is amazing and tender if prepared correctly.
