1) Pale does not always mean better – a good producer is more important than a good color
2) The youngest available isn’t always the best rule when selecting a vintage for Provence rosé
3) Provence rosé is a real wine and begs to be treated as such: served chilled, but not ice cold; use good white wine glasses so the full scent emerges; and don’t be afraid to pair it with more substantial foods.
