One of my favorite pastries to make each year: our Gingerbread Pinecone, with a center of speculoos ganache, ginger mousse, and gingerbread spiced cake, covered in dark chocolate and finished with nearly 70 individually hand-cut dark chocolate petals. A flurry of powdered sugar snow on top.
