One of my favourite breads - 30% of fereshly milled spelt and 10% of sprouted whole wheat flour is back to it's shape. I had very mere results with it lately, propably due to very weak grains. Those one were bought from Dave Miller, the dough felt so nice at 85% hydration, that I decided to push it even further ending up around 90%. I think the other thing that helped was @pearlanddragon taking amazing care of my starter while I was away ? #freshlymilled #handmixed #spelt #thebakefeed #sourdough
