No folding for 25% rye chops, 25 graham this time. Too young levain, I guess. Overnight cold bulk for 100% graham. I don't know if lighter crumb is possible with this flour, but I have some ideas for it to try in next baking. Meanwhile Ill be enjoying its custardy crumb and amazing taste #fiberattack.
