Marrakech, Morocco: A stopping point on the spice route between Europe and the Far East, North Africa's cuisine benefitted from the spices traded along the routes. Cumin, cinnamon, saffron, coriander, paprika and many others made their way into Morocco, and are now staples in Moroccan cuisine. Spices are not only used to enhance or hide flavors, but can also have medicinal properties. One of Morocco’s main spice exports, 'Ras el Hanout,' literally translated as the ‘head of the shop’ is a blend of the best spices a shop has to offer. Each shop has it’s own signature blend which varies in taste from one to the next. Commonly used ingredients in the mixture can include clove, cinnamon, ground chili, coriander, peppers, and paprika to name a few. If you walk the medinas of Marrakech and Fes you will undoubtably be treated to a visual buffet of colors and shapes that make up the displays at the spice shops. Spices can be found in conical towers, or dumped into straw baskets—but whatever the display, there is always a shopkeeper on hand to prevent you from collapsing a well built pyramid!
