Fes, Morocco: You can smell it before you see it. Unchanged for almost 1000 years, the Chouara Tannery resembles a watercolor paint set; individual stone vessels connected to each other, filled with colorful dyes and curing liquids. Men with bare legs and rolled up shorts stand waist deep in the liquids, stomping on the hides of cows, goats, sheep and camels in order to complete the first parts of the tanning process needed to create high quality leather products. Hides are first soaked in a mixture of cow urine, quicklime, water and salt which help to break down the skins and loosen excess hair and flesh. The skins are then soaked in pigeon poop and water which acts as a softening agent; and finally, they get dyed and dried. The tanner uses his feet to knead the hide to achieve optimum softness. The best views of the tannery are from the leather shops which enclose it. Attentive shop owners will even hand you a sprig of mint to place under your nose before they lead you to the fantastic view from their balconies.
