My first-time cheese-making experience was filled with exciting discoveries! As someone not well-versed in cheese, I was amazed to learn about Rennet, a set of enzymes used to separate milk into solid curds and liquid whey, which differed from my initial assumption ( I thought that lemon juice or vinegar was used...).
It surprised me a lot to find out that not all cheeses are vegetarian due to the use of animal-derived Rennet.

Talking to the producers and the actual cheese-making itself gave me valuable insights, uncovering aspects I wasn't even aware of. And! I also happily found that the solid curds tasted similar to tofu!

初めてのチーズ作り、いろんな発見があった！
牛乳を固める時に使うレンネットっていう凝乳酵素があって(レモン汁かお酢使うと思ってた。。。)、そのレンネットの作り方によっては全てのチーズはベジタリアン対応じゃないっていうことがとてもとても衝撃的だった。

実際に生産者のところに行って、体験することで、普段見えない部分まで、食べ物がどうできるのか学ぶことができた。チーズはあまり馴染みがない食材だけど、学べて本当によかった！

凝固したての固形物がまさに豆腐みたいな食感、味でちょっと日本を感じて嬉しかったな〜
