As the weather has turned milder, in London anyway, I lit my outdoor wood-fired oven after a long while, it took some time to heat up because the wood was damp, but I got there in the end. I roasted beautiful peppers in the oven. I then removed the skin, but kept the juices, added olives, capers, garlic, parsley and extra virgin olive oil together with the pepper juice. Serve with crusty toasted bread which I put in the hot oven. Of course you can roast peppers in an ordinary oven and toast the bread in a grill. I enjoyed this roasted pepper salad for a light lunch. With the remaining peppers, I made another dish which I will post in the next day or so. Can you guess what I made?
