I’ve also added some avocado for fats and of course good sourdough for carbohydrates 😋 ingredients: Serves 2 Tofu Scramble 🍳 250g firm tofu 1/4 brown onion, finely diced 2 garlic cloves, crushed and diced 6 cherry tomatoes, halved 6 brown mushrooms, halved 1 vegetable stock cube 1/2 tsp black pepper 1/2 tsp turmeric power 1 tbsp olive oil  Herb salad 🌿 1/4 cup dill, broken up with hands 1/4 cup coriander, picked from stems 1/4 cup mint, picked from stems 1 tbsp vegan pesto (store bought or homemade) 1 tsp lemon juice  to serve 🥑 1 avocado, diced 2 tsp lemon juice 2 slice thickly cut sourdough  how to make: 1. add all herb salad ingredients to a bowl, toss and set aside. 2. add all tofu scramble ingredients to a large bowl, crumbling the tofu with your hands, stir together to evenly mix seasonings through. 3. heat a large non-stick fry pan to medium-high heat. 4. ingredients:
Serves 2
Tofu Scramble 🍳
250g firm tofu
1/4 brown onion, finely diced
2 garlic cloves, crushed and diced
