Honey cake or Medovik are one of the most popular cakes in Russia. This is a honey torte or multi-layered cake of flat biscuits (cookies) with a creamy filling. The cake has cookie type layers that can range from 5 to 10 layers. I think every Russian baker has their own version of this cake. It takes a little time and patience to make this cake, but it is well worth it!
In the photo is a version of a modern honey cake. I covered it with mousse and mirror glaze on top💥.

Honey Cake Recipe🍯.

Ingredients:
120g unsalted butter 
120g honey 
100g granulated sugar 
380g plain flour (plus extra for dusting)
7g baking powder
1g salt 
100g eggs
vanilla pod .

Method:
Add sugar, salt, honey and butter to a medium sauce pan and melt them together over low heat or in a water bath and whisking occasionally until sugar is melted (7-10 mins). Remove the pan from the heat and put aside to cool slightly.

Add in your beaten eggs and vanilla in a slow steady stream while whisking vigorously until all of your eggs are incorporated (whisk constantly so you don’t end up with scrambled eggs).

Mix the flour and baking powder. Add these ingredients little by little and mix with a wooden spoon until fully combined, unthil the dough reaches a clay consistency and doesn’t stick to your hands.The finished result will resemble a slightly softer and more pliable gingerbread dough.

Cut the dough into 8 equal pieces and move on to the next step right away.
Draw a 20-22cm-diameter circle on the back of each piece of parchment paper – this will act as a template for the cake layers.
On a well-floured surface, roll each piece out into a thin circle (about 3-4mm thick).You can sprinkle the top with a little flour too to keep dough from sticking to your rolling pin.
