Photo by @amivitale / The spring runoff and early summer rains lead to an explosion of color in the Centennial Valley in southwest Montana. The first to emerge are usually dandelions, a non-native species but not considered invasive. The flowers were brought by European settlers for their medicinal benefits and to spread a flower that reminded them of home. Every part of this flower is edible, from the flower all the way down to the roots—and they happen to be delicious!
