A couple years ago, it was all over the news that coffee contains a toxin called acrylamide. That’s why coffee was required to have a Proposition 65 warning label that said: “Contains an ingredient that’s known to the state of California to cause cancer.”

It's true. Extreme doses of acrylamide are indeed harmful to you, and they are formed any time you heat protein until it is brown or blackened. However, if you were to drink a cup of coffee every day for a year, you would get as much acrylamide in total as you would get from just one or two pieces of toasted rye.

So, as with all poisons, the dose makes the poison.

Acrylamide is one of the toxins I teach you to avoid in the Bulletproof Diet because it contributes to inflammation and aging. We only learned about it 10 years ago. The state of California did admit they were wrong about coffee because there is overwhelming evidence that coffee is actually good for you. If you don't believe me, google coffee and the name of your favorite disease. Check out the studies that pop up. You’ll be amazed!

Acrylamide is also an environmental toxin. Fried food and baked goods are the big things to avoid, and it forms mostly in plant-based foods. It's much less of an issue with meat, which contains almost no carbohydrates.

In fact, your method of cooking doesn’t really matter. Frying, roasting, baking, or any kind of commercial food processing can create acrylamide. It occurs when the amino acid asparagine reacts with sugar in the food. This is also why you shouldn't put honey or maple syrup on your meat. If you are going to add one, do it after cooking the meat, not while cooking it. Add it at the very end to minimize acrylamide.

If you go deep into the food chemistry like I did for my cookbook, you’ll learn about the Maillard reaction. That’s what gives cooked food its flavor and golden brown color. So it’s not that you should never brown things. Minimize browning and charring, wait until the food is almost finished cooking, and don't overcook your food.
