By day, bitter oysters (Panellus stipticus) are an unassuming beige color—but by night, they can glow a dazzling neon green! Not all bitter oysters glow in the dark: ones found in the northeast regions of North America are more likely to have this trait than ones found elsewhere in North America, Europe, Asia, or Australia. Studies of this fungus have revealed that a single gene is responsible for its bioluminescence. Scientists think bioluminescence may attract insects or spiders to this mushroom’s cap to help disperse its spores.
