photo by @joshuacogan Gerardo Flores holds a few of the thousands of onion seedlings ready for planting on his farm in the Northern Neck Virginia tidewater region. The sandy loamy soil is great for many crops that don't grow well in wetter darker soils in the western mountainous areas of the east coast. Part of the reason I began this project was to understand exactly where my food was coming from as COVID disrupted so many supply chains. The question I was holding was whether this pandemic might actually change our food systems for the better?
