出し巻き玉子
材料
卵 5個
白出し(鰹だし) 180cc
薄口醤油 小さじ1.5
吉野葛 小さじ1
サラダ油 少々
１、卵5個分をボールに割り白身をきるように混ぜる
２、白だしに吉野葛を溶かし込み、しっかり混ざったことを確認したら1と混ぜ合わせ、薄口醤油を入れる ・卵は混ぜすぎるとコシが無くなり巻きづらくなるので白身のかたまりが無くなる程度に混ぜる。
・吉野葛は固まったまま卵にまぜると溶けにくくなる為、白出しにしっかり混ぜてから溶き玉子と合わせる。
・出し巻き鍋はよく温めて油がしっかりなじんでから使用する。(油が鍋内でサラサラ流れるくらいの感じ)
・火加減は中火にし、1回目に入れる卵液の量はやや多めにする(芯になる部分をしっかり作ることで後が巻きやすい)
・半熟状態で巻くことを意識し、手前低いところから奥の高いところへ転がし上げていく感じで巻く(京巻きの場合)
・右手の箸だけの力で巻こうとすると失敗する(玉子が柔らかい為)ので鍋を持つ左手を動かしながら巻きあげるのがコツです。巻くときの鍋の角度を保つこと、転がす時の反動を持ち手で行うこと。

1 tsp Yoshino Kuzu（Cornstarch）

1. Divide 5 eggs into a bowl and mix so that the white meat is cut
2. Dissolve Yoshino Kuzu in white soup, mix it with 1 after confirming that it is mixed well, and add thin soy sauce ・ If you mix eggs too much, they will lose its elasticity and become difficult to roll, so mix them until the white mass disappears.
・ Because it's difficult to dissolve Yoshino Kuzu when it's hardened and mixed with eggs, mix it well with white egg and mix with the egg.
・ Be sure to warm the stewed pan well and allow the oil to become well before use. (It feels like oil is flowing in the pan)
・ Set the heat to medium heat and add a little more egg liquid for the first time (making it easier to roll the core after making the core)
・ Be aware of rolling in a semi-boiled state, and roll it as if rolling up from a lower part in the foreground to a higher part in the back (in the case of Kyomaki)
・ If you try to wrap it with the power of just the right chopstick, it will fail (because the egg is soft), so the trick is to roll it up while moving your left hand holding the pot. Keep the angle of the pot when rolling, and use the hand to handle the recoil when rolling.
