All sorts of rye grain prepped for making the King of rye - pumpernickel bread. No flour is used in this recipe, just cracked and sprouted berries and two preferments. Making pumpernickel is like a ceremony.
I always knew it will be a first bread I'll make in my new bakery. So the smell of malting rye, that's in the oven for almost 12 hour penetrate every corner of a spacw and throw a good spirit into.
It's already done. We unwrapped it today and wrapped again so it could settle and ripe. And now we wait... #ryehigh #rye5
