Here’s my take, I would:
Break in some eggs (like Turkish Menemen)
Or mix in a couple spoons of Labneh instead of adding cheese for an overall creamier, tangier touch

I love adding some bell peppers to tomato sauce, more towards the end so it's still a little crunchy and this way it retains most of it's vitamins.
