From Granny Lawson’s kitchen, #RecipeOfTheDay is London Cheesecake. She would leave the cheesecake in the switched off oven at the end, first with the door still closed, and then open for a while to minimise cracks. I make an easy water bath instead, which eliminates them entirely.

A few years back, there was a video released of Charlie Sheen of Two and a Half Men fame (great show, the humour can be a bit too adult though) and Charlie was being interviewed. Now, he seemed to be going through a bit of a rough time, but there were two things he said that have stuck with me that have become almost like life mottos. The first was, "I've got one speed: Go!" To me, this represents motivation, persistence and discipline. Charlie may have been battling personal demons and public criticism, but his philosophy was still that of constant forward motion. The other was, " I'm bi-winning: I win here and I win there." To me, this represents seeing the speck of light in the darkness. It means optimism and positivity. I was wondering if you had any personal heroes who have inspired your thinking that you could share? Because in the end, we are what we eat, and that includes food for the brain, right Nigey? ? Wishing you a "Bi-winning and Go!" mindset and I hope you're having a lovely day!

@nigellalawson I am from Poland and traditionally baked cheesecakes are made this way, by whisking egg whites separately and gently folding in. Sadly, I can't quite master this style cheesecake, it always rises and collapses when cool even when I follow all the steps of cooling it very gently?

@nigellalawson i made the London cheesecake twice but it never came out with a dry base. Doesn't matter how I made the waterbath it still whetted my cake ?. The flavour though was amazing!

You should try using chocolate digestives in the base! Makes for a very good choc/vanilla combo. But then again, any form of digestive is the best for a cheesecake base! ???

@gothamvine no it’s better to just get super fine sugar - granulated is better I think. Confectioners sugar would be a bit different I think
