On an island nearly entirely dependent on imported food, 2019 Best New Chef Paxx Caraballo Moll @paxxito has been at the heart of the Puerto Rican local movement for years. After weathering the devastation of Hurricane Maria, they now helm the kitchen at @JungleBaoBao, inside San Juan bar JungleBird, where their “Asian criollo” food emerges with levity and thunderous flavor. “It’s amazing that two years after the hurricane, we’re able to buy from many local farmers again,” they explain.
