“Back in 2011 I remember telling my mom and dad, ‘I'm going to open up a barbecue joint.’” recalls 2019 Best New Chef Bryan Furman @bs_pitmaster. “My dad said, ‘What’s going to make you different?’ and I said, ‘Mine’s going to taste better.’” Since then, with @Bscracklinbbqatl, he’s emerged as a leading voice in shaping the identity of Georgia-style barbecue. That Furman is a black pit master is a proud part of the narrative here—the black presence around the barbecue pit has been historically erased. “Many cultures have shaped American barbecue, but we don’t get enough recognition for the part we played,” he says.
