Let’s all just make these and pretend we’re in Miami too! 4 cups tortilla chips 3 cups plantain chips 1 15-ounce can refried black beans 4 ounces carnitas, shredded 1 cup guacamole 1/4 cup bread-and-butter pickle chips ¼ cup chopped fresh cilantro ¼ cup sliced green onions 1 lime, cut into wedges for garnish Pickled Red Onions For the Queso 2 tablespoon unsalted butter 2 tablespoon all-purpose flour 1 ½ cups whole milk 1 teaspoon ground mustard 1/2 teaspoon kosher salt 1/8 teaspoon black pepper 1 cup shredded Swiss cheese For the Queso: Melt butter in a saucepan over medium, and cook until lightly browned. Reduce heat to low, and sprinkle with flour; whisk until incorporated. Drizzle in the milk, whisking constantly, until mixture is smooth. Turn heat to medium and cook whisking often, until thickened, about 5 minutes. Whisk in mustard, salt, and pepper. Add the cheese in and continue to whisk until melted. Keep warm over low heat. For the Nachos:  Arrange half of tortilla chips and plantain chips on a baking sheet. Dollop evenly with 1/2 cup of the Refried Black Beans, and drizzle with 1/2 cup of the Cheese Sauce. Top evenly with remaining tortilla chips and plantain chips. Dollop remaining Refried Black Beans over chips, and top evenly with pork, guacamole, pickles, cilantro, and Pickled Red Onions. Drizzle with remaining Cheese Sauce. Serve with lime wedges.
