Our version of cacio e pepe at @189bydominiqueansel: Seared Hen of the Woods Mushrooms with a fresh egg “cacio e pepe” sauce and plenty of shaved parmesan on top. We make a rich confit egg yolk sauce with parmesan and black pepper, and those nooks and crannies in the mushroom soak up all that saucy goodness. Perfect.
