Gooey Vegan Peanut Butter Brownies ??[Warning: not a “healthy” recipe but a damn tasty one] ? Ready for some weekend baking? Today I made these @beamingbaker brownies (with a few tweeks) and they BLEW MY MIND ? By far the best vegan brownies I’ve ever had! ? Give them a go: ➡️ Preheat the oven to 165 degrees C & grease a baking tray ➡️ Whisk together 1/4 cup nut butter (we used peanut), 1/2 cup brown sugar, 1/3 cup maple syrup & 1/4 cup & 2tbsp melted coconut oil until it resembles caramel ➡️ Add in 3/4 cup cocoa powder slowly, stirring in as you go ➡️ Add 1 tsp vanilla extract & a dash of salt ➡️ Stir through two flax eggs (just mix 2 tbsp ground flaxseed with 6 tbsp water and leave to set for 10 mins) ➡️ Stir through 1/4 cup flour (I used buckwheat flour but any works) ➡️ Fold in a mountain of vegan chocolate chips ➡️ Pour into a pan and then drizzle on more peanut butter and sprinkle on more chocolate chips ➡️ Bake for 25-30 mins.
