#BandWidowDinner (or should I say linner?) #8: A blue-plate special of curry chicken salad & roasted veg pasta salad! Simple and delish. For the pasta salad, start with rocchetti and add roasted rainbow carrots, green beans, and snap peas. Mix in a pesto of carrot tops, tarragon, garlic, lemon, pine nuts and EVOO. Serve cold.

For the curry: Use cold, diced, poached chicken and mix with Greek yogurt, EVOO, curry powder, ginger, scallions, celery, seedless grapes, toasted almonds, chutney, dill, parsley and cilantro with bread and butter pickles.
