Salmon and Ginger Soup Rice. A great source of protein, anti-inflammatories, antioxidants and hydration, all while having a light comforting taste- making it perfect for anyone who isn’t feeling well.

Ingredients (serves 4-6)
*salmon (I used 4 pieces)
*ginger (I used about 10 pieces, smashed)
*1000ml water
*2.5 tsp dashi
*2 tbsp rice vinegar
*3 cups of rice, cooked (you can use leftover rice to make this even easier/faster)
*white pepper (adjust to taste preference)
*spring onion (garnish)
*furikake (garnish)

Method*
1. Pan fry salmon in some neutral oil with the ginger until the salmon is golden brown.
2. add the water, bring to a boil and cook for about 15 minutes
3. sprinkle in the dashi, rice vinegar, and white pepper, cook for another few minutes, taste and adjust if you want to (you can also add salt if you like but I didn’t feel I needed to)
4. strain, separate/debone the salmon meat
5. place a small bowl of rice in a bowl, garnish with spring onion and furikake, then pour the soup broth on top
