My family can’t get enough of this flavourful fall dish 🍚 This is Easy Toddler-Approved Whole Family Recipes *Episode 5*, Chinese Pumpkin Rice

INGREDIENTS (serves 3-4)
*2 cups long-grain white rice (use the rice cup)
*1 cup of liquid from soaking the mushrooms (top up with water if needed)
*1/2 cup of chicken bone broth or chicken broth
*400 gr boneless skinless chicken thighs, cut into bite-sized pieces
*400 gr pumpkin, cut into cubes
*5 shallots (or 1/2 small onion), sliced (optional)
*5 garlic cloves, minced
* 6 large dried shiitake mushrooms, soaked in 2 cups of hot water then sliced
(if you don’t have shiitake mushrooms you can use crimini mushrooms, portobello mushrooms or oyster mushrooms)
*1 cup of liquid taken from soaking the mushrooms (top up with water if needed)
*3 Tbsp neutral cooking oil
*Toppings: green onion, sesame seeds, chilli (optional)

Marinade:
*1 Tbsp coconut aminos
(or soy sauce)
*½ tsp sugar
*¼ tsp white pepper
*1 tsp cornstarch

Sauce:
*2 Tbsp coconut aminos
(or soy sauce)
*1 Tbsp oyster sauce
*½ tsp sugar
*¼ tsp ground white pepper
*pinch of salt (optional- I didn’t add any)

Rice cooker Method:
1. place the dried shitake mushrooms in 2 cups of hot water so they will soak and become soft.
2. Add the chicken, shallots and marinade to a large bowl. Mix well and set aside.
3. Was the rice until the water runs clear then drain as much water as possible and set it aside.
4. Chop the pumpkin, shallots, garlic and mushrooms (when soft). Also prepare the sauce.
5. Heat up some oil a large pan over medium heat then saute the garlic for about 10 seconds before adding the mushrooms and stir frying for another minute.
6. Add the chicken mixture and cook it until the chicken turns opaque but isn’t cooked through.
7. Add the rice and the sauce, then stir well to combine everything.
8. Transfer the rice and chicken to your rice cooker.
9. Pour the chicken broth and mushroom water in then stir to mix.
10. Place the pumpkin cubes on top and cook on the white rice setting
11. When it’s ready garnish with optional toppings (green onion, sesame seeds, chilli)
