In Kyoto, sushi that is pressed or rolled is called ‘Kyou-zushi’. 🍣 Beautiful presentation is important. Because of their antibacterial properties, aspidistra leaves were originally placed between the sushi pieces. 🪴 Today their main purpose is decoration. Designs include kanji, and motifs associated with good fortune.
