Who loves miso?😋

1,000 years ago, a special white miso made from rice evolved within Kyoto’s dynastic culture. It is used in traditional Kyoto cooking and celebratory dishes.

Kato Masatsugu runs a miso brewery that was established over a century ago. The bacteria that live in the old wooden barrels and the building itself result in a taste that is unique to this brewery.

When his father became ill, Kato took over the family business. He had to work very hard to learn the process.
