A quick healthy chicken salad. I love having marinated chicken in my fridge while trying to eat healthier. I just pop the serving in the air fryer and serve it with a different kind of salad every time to change things up. It’s a life saver!

CHICKEN MARINADE
2 lbs of chicken tenderloins
1/2 cup lemon juice
3 tbsps shish tawook seasoning
1 full tbsp yogurt
1 tbsp ketchup
1 tbsp dry cilantro
1 tbsp tomato paste
4 cloves garlic, minced or mashed
1 tsp paprika
1 tsp black pepper
1/2-1 tsp salt (to taste)
1/2 tsp cayenne pepper
2 tbsps olive oil

SALAD
Lettuce
Sliced onions
Blueberries
Feta cheese
Corn
Shredded carrots
Artichoke hearts
Tomatoes

SALAD DRESSING (makes several servings) blend everything together.
* 1/4 cup fresh lemon juice
* 2 tbsps honey
* 2 tbsp distilled vinegar
* 3 tbsps dijon mustard
* 3 tbsps olive oil
* 1 large garlic clove
* 3/4 tsp dry oregano
* salt & pepper to taste

Cook chicken tenders in the air fryer at 380 F for 12 minutes. You can spray them before cooking and flip them half way through.
